Crispy Kale, Bacon, and Avocado Sandwich

There’s nothing worse than a flatmate popping his or her head into the kitchen to ask if you’re alright because you’ve burned your bacon and the smell is in the hall.

This sandwich was the cause of that awkward interaction. But I must say, it was worth it. PLUS I’ve been in the kitchen when it’s weird and smoky before so although I was caught red handed (or, rather, black and burnt) I know it isn’t just me!

Now that I’ve talked myself out of my guilt, a new recipe! I know I’ve been doing this a lot but I usually forget my camera and then I’m cooking and can just run back and forth to my room if need be.

Ingredients:

Salt

Pepper

Handful of kale

Three pieces of bacon

One avocado

Two pieces of bread

Step one: Crisp up your kale! A little bit of oil, toss the kale on top, salt and pepper over the top (A few shakes/grinds of each) and then a minute or two on the stovetop. Remove, and add more oil.

Step two: Cook your bacon! I like mine burnt and really crispy but you do it how you like it!

Step three: While the bacon cooks, put the bread into the toaster.

Step four: Slice and prep your avocado! Remove the seed, add salt and pepper, mash it up, and spread it on your toast.

Step five: Put the bacon on, then the kale, and smush it together into a really delicious sandwich. Serve with whatever you haveΒ on hand (I chose Pringles because I’m very excited about my Tesco carrying them).

Super easy, fairly quick, and simple to prepare the night before a school day. Just put get a multi compartment lunch box so the avocado stays separate from the rest, and assemble during your lunch hour.

If you decide to make this, you could also add tomato (I forgot to buy them) or switch out the kale for regular lettuce.
